As BBQ season approach us (for some is always BBQ season) I would like to share one of my personal ways to cook ribs. I call this my Sweet Sticky Ribs recipe. This for sure will be a family favorite. its sweet yet spicy (depending on your choice of rub) ans easy to make
Ingredients:
Slab of Ribs (baby backs was used in this cook)
Your favorite dry rub
Brown sugar
Squeeze butter
Worcestershire sauce (optional)
Heavy duty aluminum foil
Directions:
Remove membrane from the back of the rib and pat dry. Slide a butter knife under membrane and use paper towel fro grip to remove because the membrane can get slippery
Dash Worcestershire sauce on ribs and rub all over front, back and sides
Spread dry rub on the ribs covering the front, back and sides
While the rub sets on the meat, start preparing charcoal for smoker or grill ( a kettle style grill was used with the indirect heat method on this cook, also hickory wood chunks was used)
Once your cooker is setup, place ribs on the cooker and cover. The temp used on this cook was around 225F.
The "Texas Cheat" also known as 3-2-1 method was used on this cook, since these were baby backs you make that the 2-1-1 method. meaning smoked un-wrapped for 2 hours, wrapped for one hour then back un-wrapped for 1 hour
Take out enough foil to cover ribs. Sprinkle generous amount brown sugar on foil then squeeze butter on top of brown sugar. After 2 hours of cooking, place ribs top down on foil, Wrap the ribs and return to smoker and let it cook for a hour
After a hour of cooking. Un-wrap the ribs and place back on the smoker for another hour. Remove ribs, let them set for a few minutes then slice and enjoy!
